How in the heck do you catch these things? I have put crabpots down on the beach for a freaking week and I get nothing each time.

You don't catch them. You forage them from the beach and tidal pool areas.

I have done that and they have not registered on my fishing list.

A lot of stuff that can be foraged from the beach can be caught via crab pot.

It might be seasonal, or weather related. I don't know offhand.

The mussel, the crab, the lobster, and all these fish you can obtain from crab pots are the only ones that will count towards the fishing achievement. Some fish can only be caught from ocean, some different ones from anywhere else but the ocean (usually on your farm's big lake is fine). You were just unlucky. Mussels will eventually appear in your crab pots. Have like 10 pots at the beach, and 10 at the farm, you'll catch all the needed ones in no time for the fishing achievement. Hope it helps.
