What else would you do on a farm in winter? Nothing. Go mining and fishing.

or play that far to get your greenhouse

Not much of a difference , you can still grow wild winter seeds. Fishing/mining is a great way to spend your time , also upgrade your farming tools to prepare for the next year.

Something I'm doing now is building on the farm , didn't spend a lot with that when I had crops so I'm doing it now , also reached bottom in the mines the first 2 days of winter because I had free time and energy.

If you don't have fruit trees you can plant those. Just make sure there's nothing around it for 8 tiles in each direction, or else it could interfere with the time it takes to grow (I planted them recklessly without doing that and it took two seasons for them to grow) You could also work on getting new buildings on your farm, there's actually many things you can do in winter
You could also plan your sprinklers, thats what I did. I build walls, cobble stone paths, scarecrows and everything. On top of that I build like 4 buildings after the great fall profit.
I advise to keep around 20k for spring (I brought a cherry tree too, therefore could be a bit less).

Isnt it more like a sprinkler form for the trees? Because 8 tiles in all four directions sounds like a lot... .

I used my first winter to pave roads all along my farm, drop seven silos, four barns, two coops, and start planting trees (so they could grow once Spring came)- I also leveled my fishing skill and got to the end of the mines.

I feel it was rather productive.

:tip: While your farmland is barren for the winter, don't be shy about hoeing the ground anyways- it'll yield you Winter Roots, which you can throw in a seedmaker for wild winter seeds. These grow into the forageables for the season and can help you level your farming and foraging skills during the dry season.

Hmm with winter what'd be better to build? a Coop or a Barn?

Both, and more.
