Can you get clay in the Winter?

yep, worms which spawn during winter can drop clay as normal, on top of the normal random chance when digging anywhere. Since you get more worms in winter (or it at least seems that way in my experience), and you want to dig all over the place when you have energy in the hope you find winter forage items (winter root, snow yam, and rarely crystal fruit)... so there's a good chance you'll actually find more clay in Winter than in any other season!

Many people like to explore the caves during winter since they don't spend so much energy farming; and you can get clay from the sandy patches underground as well.

Yep! Those worm tiles you often see during winter can often drop clay and will also help you find lost books for the library too. Just keep using a hoe on the ground and you will get some eventually :)
