Would make the game too easy.
if you're on your first playthrough you won't be getting the greenhouse done by year 1, nor would the catalogue be free. really it doesn't make the game "easier" at all in regards to profit since it's just slightly less waiting, it just makes it more convenient for gifting and recipes.
Besides... What can be more OP than starfruit seeds of which already are sold whole year?
P.S. noone sais that you should be able to buy ancient seeds there...
The only real use would be for cooking or gifting...
Also, I'd love if Pierre sold seeds before the season. Like, on Spring 25, he starts selling Summer seeds.
You can get starfruit and grow them in your greenhouse every season. Likewise, you can stock up on seeds in advance for the greenhouse and still grow them year round.
It's not like you can plant them out in your field out of season, and the greenhouse has limited space. How would it be gamebreaking to buy blueberry seeds on Spring 26, when you can buy them 3 days later at the general store?
I just don't follow your logic.
