Edit: I usually have no trouble maxing farming skills in the second year, even without farming the first winter.
Now if I could just find a way to increase that bedamned fishing skill level quickly...without actually having to fish. :P

Don't Crab Pots give you fishing exp? Set up a bunch of them and make rounds every day.
It's the whole fishing thing in this game that I loathe, which is too bad, since I tend to enjoy it in other games I've played. But I'll give the crab pots a whirl, since I've neglected them in previous playthroughs. To be blunt, once/if I get the achievement for it, I doubt I'll ever fish in this game again. Give me a thousand acres of cropland to reap, but stuff the fishing. :P
There have been a few that pretty much require becoming an expert fisherperson in order to get high amounts of money for more expensive gear and such, and fortunately the fishing mini-games in those were quite fun. Some of the Final Fantasy games make it harder than it needs to be, and most of the Elder Scrolls games where fishing is a sidequest is mostly based on RNGs to determine if you get a Mega-Super-Gold-Level-Ultimate-Fish...or a scrod.
But I'll try the tips and see if I can at least catch something besides dripping copies of the Stardew Valley Gazette. :P
Edit: also make sure to use bait and lures. I mostly only use the cork or trap bobbers.
I have a friend who uses old newspapers for a great many things, especially insulation. She's quite the genius when it comes to recycling, although I'm not sure if she's turned multiple copies of the New York Times Sunday Edition into a full wardrobe yet. Knowing her, she could though.
