Does the quality of the fish matter if you put them in your constructed fish pond?

Yeah I revisited Stardew Valley after a few years and noticed that you now can build a fish pond. Somewhere I read that you can now make caviar. Does the quality of the fish matter?

Only sturgeon roe from the fish pond will give you caviar; other fish roe will turn into "aged fish roe". As noted, the quality of the fish put into the pond does not matter, so go with the lowest quality you have and sell the higher quality ones.

and if you empty the pool again all fishes you pull out are normal quality.
also you dont get caviar directly, you need to age it first in a keg.
