Question about transferring a singleplayer farm to a co-op farm
I know you can build a cabin to enable someone else to join your game, can I destroy it after we're done playing? Or is it just permanently classified as a "co op farm" ?

The game doesn't make a difference there. You can always start any saved game in singleplayer, no matter if you've placed a cabin down or not. There will also be no downsides from it, except that you've obviously no access to any others players inventory. Destroying a cabin however will leave a chest back with the deleted players inventory in it.

And the only thing, which is changed by having a cabin placed down is, that the save file will show up in the coop menu.

Every coop specific game changer (like time not stopping while doing specific things or regenerating energy while lying in bed) will only occour, when you start the game in coop, but it will be a regular singleplayer game, when you just load it without the coop menu

You can load a co-op farm into single player without issue. And then later load it into co-op again.

Specifically those changes start when the second player joins the game.
So if I marry someone in co-op then get rid of their cabin, will they stay in the friendships tab?

Anything related to the savefile owner will stay untouched

Getting rid of a cabin will delete the player, which is associated with it, including all skill levels and friendships (so if they marry someone, then this character will return to their usual schedule again). If you place another cabin down later, then they need to create a new character again.

The main downside I noticed with COOP farms is time still moves when you're in cutscenes in COOP but single player it freezes time during the cutscene.
