Possibly both since they take different materials and you can farm coal/stone and copper/iron at the same time anyway.
Once you get like 40+ kegs/jars setup you will have pretty much infinite money and they you can buy ALL the things.
When you start getting bored of farming or tending animals, start investing on a lot of kegs and preserve jars.
They amplify the profits with minor work involved.

Have you completed all the bundles in the community center? Then build stuff you need to get items for that, if you just need money then you can't go wrong with more crop fields and sprinklers. Coop can be handy for producing mayonaise which is a gift that is easily procured all year round and almost universally liked by everyone.
Slime hutch can be fun but other than farming purple slimes for iridium ore it isn't incredibly useful, artisan goods do sell for more but if you have a good crop rotation going then you will probably be already making more than you need, artisan goods do make good gifts for some people though.
Some tips, you can get "wool" from Emily and "cloth" from recycling "Soggy Newspaper" and you can buy some fruit from traveling merchant (bit expensive tho).
Once you get the Green House and build lot of Kegs, money won't be a problem anymore.
Tips for Kegs and Preserve Jars, in general low-value crops = preserves jar, high-value = kegs, but some crops just more valuable when turn to wine or juice,
for example Melon raw price = 250, Melon wine = 750; while Pumpkin 320, Pumpkin wine 720, both takes 7 days.
You can check detail of all fruits & vegs price when turn to wine / juice / jam, ext, but in most case use Kegs for Fruit and Preserve Jars for vegetable.
And some tips for Green house, buy Iridium Sprinkler (10,000g) from Krobus (the sewers), he sell 1 Iridium Sprinkler every friday. if you haven't get lot of Ancient Fruit, Spam blueberry on your Green House with 6 Iridium Sprinkler, and with steady high-income you can focus more on other things like catching Legendary fish, Mining or just build relationship with all the villager.
