start with fish early in game, then collect forge until you get a kitchen.
Make lots of those snack from tree seeds.

Sashimi, especially when you have a couple of crab pots. You can unlock it by befriending Linus. You just need three hearts with him.

Roots Platter if you regulary go to the mines and bring back the ingredients.

Eggplant Parmesan is easy to make once you hit autumn. Both ingredients grow in your fields and they both can be harvested over and over again until the season ends.

Once you get a mill setup and have a lot of wheat growing on your farm, assuming you have a kitchen in your house, flour is a great resource for cooking, and bread is one of the easiest meals to cook which uses only one box of flour.

While it doesn't grant any stat buffs, they're great to carry around in a pinch if you need the extra energy to keep going or health to survive.

Gold quality cheese is the easiest for me. Full heal, just use some buffs before.

I think at some point I just bought salads.
Early on the snacks made from tree-seeds and just whatever foraging I could find - but once I got some steady income, buying salads just ended up to be the easiest way.

Also funfact: tree-stumps still spawn seeds. So you can keep those around early on to gain more seeds, while cleaning the farm.

Sashimi or Hops. Sashimi takes a bit more effort, but requires you to eat fewer times, whereas Hops requires you to eat more, but is easier to collect.

I think most all the people missed the point here, op said WHILE mining. So good food while mining is going to be tilling the ground in the mines for cave carrots, and then fishing at floor 20, 60, or 100...that's about all the food you can get directly from the mines

To be fair, those are all very bad options. Tilling for carrots would take more stamina than recovering and fishing is just so extremly slow, plus offers mostly garbage in the mines.

It depends what you mean. Others have given good food sources for early game, going into midgame. Sources from the mine itself vs. sources from the farm or saloon.

For me, if I have a choice, I like to have buffs for speed and protection, or luck while mining. So I like to drink ginger ale if it's available, for the luck boost, otherwise perhaps I'll drink triple espresso for speed.

If you have 7 hearts with George you can cook Spicy Eel, which gives +1 luck and +1 speed boost. If you have 7 hearts with Robin you can cook Pumpkin Soup, which gives +2 defense and +2 luck. Both of these buffs last about half a day, which is good for most mining.

If you get the cut scene with Willy's 6-heart event, and can afford 550 each, then you could buy unlimited crab cakes at the saloon for +1 speed and +1 defense that lasts all day.

For absolute easiest/cheapest food source though, I like berries. Salmonberries are available from spring 15-18, and you can forage hundreds in that time. They stack perfectly, so you can keep as much energy on you as you need for mining or any other activity.

Salmonberries give 25 energy and 11 health each, so you'll want lots to keep you going. But the nice thing is that you can eat just enough for your health or hunger needs, and not waste expensive calories by gobbling a big meal at 10pm when you just need a little more to finish out the day.

Blackberries are the same as salmonberries, but they're available Fall 8-11. By then you probably have better food sources. But they are still plentiful and cheap if you need them.
