Huts and placement
Alright, so I get conflicting info about the radius and performance of junimo huts. Most visuals of them see people having a full square of crops around them, which puzzles me given that scarecrows have a "radius" of 8 that actually turns into an octagon but...okay.

As for performance, some sources say they may not finish harvesting all of that square in a day, some don't seem to have that problem. Which is it? Were they patched and some discussions/guides are just outdated? Should I put two huts next to each other to ensure they finish in a day?

normally the huts reach 8 squares away from huts in all 4 directions, forming a square. The square is because most fields are made in a square. Sprinklers work in a square too.

If you have the BetterJuminos mod installed, you can adjust them to work further afield.
You can also tell them to work in the rain or in the evening.
If you put one hut in the middle of a large field , even in vanilla they will harvest a lot of crops for you daily. You also need to keep an eye on the crops in their hut, as they may stop working , or just leave the crops laying in the field if their hut is full.

However, if you have an automate mod installed ,and place an empty chest touching the hut, crops will go into the chest as harvested, to provide the Juminos with extra inventory space.

If you have an extra large farm, then its fine to put 2 or more huts at opposite ends/sides of your fields. They should not be next to each other, as overlapping their work space is counter productive.

Yeah most of the videos I see demonstrating the huts have a square field around them, but many are several months or even years old so I just wondered if that was unchanged; looks like it's still that way now.

So you're saying two adjacent huts wouldn't actually work? I assume they'd mostly overlap their fields and ensure a full harvest in a day. Do you mean I should spread them out so the fields just overlap less, like say, overlap them 8 squares away so they share the center field? I imagine that would help their speed without either hut taking up actual crop space, right?

yes, something like that. Or if you have enough room, give them each a large field with little or no overlap. It all depends on how much space you have for planting.

if you use one superscarecrow (you get the plan by collecting all collectable SCs) behind the jumino hut this one SC covers the complete operation field of the Hut.
on a normal day the junimos can harvest all allright, i read they can get problems on town festival days (sometthing about there time just stops during the event, but never encountered that myself, and if thats the case a double hut oudend help you as well).

the wiki is very acurate, better look there than at any videos where you dont know what ppl bend in there games with mods.

https://stardew.info/planner/ Here you can layout your farm, see what is covered by scarecrow, sprinklers and juminohuts.
