[TUTORIAL] How to change your farm type after you start your playthrough
Alright so first off you want to go to

Windows C:\Users<your user name here>\AppData\Roaming\StardewValley\Saves
Linux ~/.config/StardewValley/Saves
Mac ~/.config/StardewValley/Saves
Other devices and platforms + advanced help [stardewvalleywiki.com]

And choose the save you will be editing. There should be 2 files with the name of your character with a string of numbers after them, open both with notepad (If you want to be safe also edit the old file. Just follow the same steps as the others)

Hit Ctrl + F (or find the search function for your text editor) and enter "<whichFarm>" it should bring up something similar to "<whichFarm>0</whichFarm>" All you have to do is edit the number in the middle.

0 = Standard Farm
1 = River farm
2 = Forest Farm
3 = Hill-top farm
4 = Wilderness farm
5 = Beach Farm

Edit BOTH files with the same number.

Then just open your game, then the save and you're good to go

Disclaimer

Actually, it is highly recommended that you only switch farms in an ongoing save if you are also familiar with using mods since there is a particular mod called Reset Terrain Features[forums.stardewvalley.net] which will help clear up trees, bushes and other terrain stuff that will end up in weird areas on the new map. There are things that you normally can't clean up by just switching back and forth between maps.

The link I provided is to an unoffical update of the mod mentioned above on the offical SV forums which works perfectly fine since the one present on Nexus is outdated :>

That could have some hilarious results if you switch farms while having stuff built / planted on it already.

You can actually make some really nice cosmetic changes by switching back and forth between maps, with some careful planning. I used this method myself on my very first Riverland map to make my own custom bridges. (I will post the image of that farm)
