I have these things, but the problem is the seeds/beans themselves. They are too sparsely distributed.
It is mathematically possible to get 500 fully-grown Qi plants from a single seed in under 18 days.
Edit: I miscounted, and miscalculated. Using the Agriculturalist Perk and Deluxe Speed-Gro, Qi fruit takes two days to mature.
Starting with just one seed, running every fruit you get through the seedmaker, and assuming the average of two seeds from each qi fruit through the seedmaker...
On day 21, you will have 512 fully-grown qi fruit.
This will go faster if you have more than one qi fruit to plant on day one, of course.

Ah! If only I had known that yesterday, I could have tried it. Such a crap! I hope I don't have to wait that long for this quest again, then I'll try again, but it's still stupid that there are only 21 days and not 28 days that you can have for the quest.
This is also the approach that I already knew and followed. On the first day I was able to find up to 12 beans (and cut down the entire forest in Stardew Valley. xD) and planted them. When they were ripe I put half the plants in the seeder to get more beans out. The only problem for me was that after 7-8 days I hardly found any new beans at all, but I tried to get to the 500 fruits. Unfortunately without success.
Don't harvest and replant _half_. Harvest, seedmake, and replant them all.
With regular or deluxe speed gro alone, Qi fruit takes three days to mature. Youre also going to want a /lot/ of Seedmakers. and a lot of empty space.
One thing you can do is clear field space ahead of time, fertilize it with speed-gro, and plant it with whatever cheap, quick-growing crop works for that season (Parsnips for Spring, Radishes for Sumnmer, Bok choy for Fall,). They'll grow exactly as fast as qi fruiit does. Leave them in the ground until you need the space for the Qi fruit, at which point you can harvest them (or axe them if you need a little more space ahead of time.)
Assuming you're buying or producing sufficient Speed-Gro, and I haven't mis-counted the days:
Day 0: 12 planted Qi Fruit, water them all. Use spare time to clear and pre-fertilize and pre-seed extra fields as above.
Day 3 Harvest 12 and Seedmake 24 qi seeds. and Plant them all.
Day 6 Harvest 24 and Seedmake 48 qi seeds. Plant them all.
Day 9. Harvest 48 and produce 96 qi seeds. Plant them all.
Day 12. Harvest 96 and produce 192 qi seeds. Plant them all.
Day 15. Harvest 192 and produce 384 qi Seeds, Plant them all.
Day 18. Harvest 384 q1 fruit.
This is going to get you just under the wire. Ship half (192 qi fruit shipped), Seedmake half(384 new seeds, replant them all.)
Day 21: Harvest another 384 qi fruit, ship them all. 576 total Qi fruit shipped.
I haven't tried it myself, but I did read about it on the Stardew Valley wiki. When all the Qi fruit vanish after the quest expires, the game doesn't account for any Qi fruit that Pierre has in his stock. So i you time it right, you an buy back most - if not all - of the fruit that you sell to him.

Since someone bumped this thread, I figured I'd point this out....
I noticed in the patch notes that this exploit has been removed. It's not possible to cheat this challenge any more.
My tip would be to do it in the winter, when all your fields are free and ready to go.
And follow all the tips already mentioned, especially the Speed-Gro.

- I found like 24 seeds by using 6 treasure totems in the desert
- Mega bombing the volcano levels on Ginger island is also prolific for finding seeds.
