Cool beans about the trees, definitely going with that strategy then. So I don't have to worry about the soil or placement other than surrounding 8 tiles being empty?

Read the wiki article for more details and a planting plan.
The Mushroom cave produces six mushrooms consistently every day, and will likely outperform the fruit bats on income if you're shipping the contents (ignoring artisan goods). Additionally, it is the best and most consistent way to get the ingredients for the Life Elixir, which is a great item to have when going into the mines or skull cavern. However, it is the more maintenance-heavy option, requiring you to gather the contents daily in order to keep producing, and the items it gives aren't good for gifting outside of a few villagers. Additionally, the bundles it helps with are either easy to complete (Fall Foraging), can be completed with other items (Exotic Foraging), or have other components that are far harder to get quickly (Dye and Field Research)
Overall, I prefer the Mushroom cave, mostly due to the consistent production of Life Elixir.
