The real question is - what about the mod appeals to you? Do you understand the core game and have played it? Do you understand the mod, the thinking of the mod team, and agree with their design choices? If yes, then use it. If not, wait until you have "yes" to those questions.
I use a LOT of mods. Tractor, Multiple Spouses, Automate - those three make up the core of my gameplay these days. I haven't used SVE, but that's because I am unsure if it would enrich my game or not. I also haven't really checked it out. I know that it's a big project with a lot of content, and I am always afraid of "Just Too Much" syndrome.
That makes sense then... I have a huge back log myself, many games sitting on my Steam that I haven't even downloaded yet. :/
If you're going to go ahead and play SDV with the SDV Expanded mod, I recommend you should also look into the Ridgeside Village mod, and East Scarpe. I believe those two mods also flesh out the game.

But there's things I adore like the added shortcuts so you can easily travel through to parts of the world. I wish Concerned Ape would add those. And if you use one mod you can use others like the NPC Locations and minimap mod. Those are amazing, no more guessing where the hell a NPC is on their birthday or for a quest.
God the SVE farm map is so big, I can't describe it without repeating "gigantic" or adding an expletive. I'm thinking of playing with that mod again, but maybe I'll stick to the normal maps. Perhaps the OP should consider keeping this bit vanilla haha.
