Do fertilizers stay after you harvest the crop?
I'm pretty sure they do but I want to make 200% sure first.
I thought Strawberries were sold on the second holiday in Spring so I didn't get any in Year 1, but if I use Deluxe Speed-Gro and plant them on Spring 13 Year 2, I'll be able to just barely get 3 harvests out of them instead of 2.
And until then I could grow potatoes on the Deluxe Speed-Gro, because that way I'll be able to get 3 harvests instead of just 2 and they'd be harvestable on the Saturday of the festival

Also, I'm 1 item away from unlocking the Greenhouse, and I have fruit trees that grew over winter so I'll be able to do that day 1 of Spring Year 2. Which crop is worth the most withOUT any kind of processing, like putting it into a keg or preserves jar?

Yes, as long as you keep the soil tilled the fertilizer will last the entire season after being used. Thanks to the Deluxe Speed-gro I'm getting 6 strawberry harvests per year, and 3 starfruit harvests (up from 5/2.) As for what would be worth the most without processing is cauliflower. Which, without Deluxe Speed-gro, would come up on Spring 13 if planted Spring 1. So same day as the festival. However, I will point this out. If you are buying the Speed-Gro instead of crafting it, DO NOT BUY DELUXE. The regular Speed-Gro will give you three harvests and a bit of profit from that third harvest, where the deluxe will lose you money without processing more than likely. Strawberries with Tiller if normal quality sell for 132 which will be what most of them come out of, Deluxe Speed-Gro from Pierre costs 150. While the regular will cost 100 gold per, which without Tiller (If you went Agriculturist, you wouldn't need the Speed-Gro period but let's say you're in year 1.) would give you a net profit of 20 per single strawberry, most if it gives you multiple/silver+ quality while still getting the 3 harvests.

Depends on what you mean by worth the most. This will change with the seasons regardless of how one interprets the question but, assuming you mean "the one with the highest base price" (it's what I think), then the overall answer is starfruit. It's not great financials to just sell these very valuable crops without processing them, however. For the most profit without any kind of processing, it's way better to spam low-value but abundant harvests. Blueberries and cranberries fill this niche for summer and fall, and I think potatoes would be the spring equivalent. I feel like doing some math, so let's see how one starfruit seed compares to one blueberry seed without processing (item quality and perks are disregarded for simplicity's sake, but wouldn't change the results).
Starfruit seeds can only be reliably obtained from Sandy, at the cost of 400 gold. The crop sells for a base price of 750, giving you a 350 gold markup. Not all that impressive from the most valuable crop in the game if you ask me.
Blueberry seeds can be bought from Pierre for 80 gold. Without speed-gro you'll get 4 harvests from just one plant, which will give 3 blueberries each time, every one of which sells for a base of 50. 3x4x50-80=520. If you were to invest the same 400 gold you'd have paid for the starfruit, it would be 2600. That's why people are always selling starfruit wine instead of starfruit, if you don't process these high value crops they're just not competitive. Potatoes in spring, blueberries in summer and cranberries in fall are the way to go if you're just shipping the crop itself.

You can just look up the crops in the wiki for raw value per day. But be aware, that some of the best crops come with a big downside like a high initial investment (starfruit seed costs 400g for example) or a high time investment (coffe beans for example needs to be harvestet every 2nd day and the processing into coffee is quite time consuming as well, hops need to be harvestet even every single day), so just because something isn't as valuable it still might be a better choice depending on your playstyle.

I could only be bothered with coffee after I got the automate mod. It's good money but the issue, ironically, is that it processes too fast. In vanilla it would require CONSTANT maintenance if you care at all about efficiency, taking the coffee out of every single keg and putting more beans in every hour or so... It would have killed me.
Spam crops like blueberries and cranberries are the most profitable if you're not doing any processing. Like you said, their value is low but they're far from useless.
