What I should do if I was you was to set up some winter wild seeds. Then fish for the fishes and levels you need (remember that you can only catch The Legend legendary fish in spring while raining). Then go to skull cave to gather as much iridium as possible. You need iridium and batteries for the good sprinklers.
I don't know whether mining or fishing would be more profitable for you in your spare time, but I would personally spend lucky days mining and neutral/unlucky days fishing (with bait).
Mining: On good luck days, go to the mines and hope for gem nodes to spawn. Grind levels 40-69 for coal drops, Frozen Geodes and hopefully Omni Geodes. You can go levels 81-89 if you're confident you can survive consistently, good gems there. Break the geodes down and sell everything.
Fishing: At the end of first year, your fishing should be max or near max. Try to get the Winter Glacier fish before winter ends. You do want it to be max for when Spring comes so you can get the Legend fish. If you have House lvl 2, make Sashimi and sell it (Use Periwinkle, Carp, Herring, Mussel, Oyster, and Sardine). Sell all other fish.
Farming: Create 10 or so Preserves Jars and Kegs. Hopefully you have been saving some fruits and vegetables. Preserves Jar: Use Cauliflower, Artichoke, Yam, Kale... etc. (Might have a lot of extra Potatoes, Eggplant, Tomato, Blueberry, Corn, Hot Pepper, those are low value). Keg: Pumpkin, Melon, Crystal Fruit, Hops, Strawberry (Grapes, Spice Berries, Wild Plums, Cranberries if you have nothing else).
Set up your jars and kegs, wait for the products to finish, and watch the cash flow in.
Prepare for Spring: Craft maybe 5 bee hives or more (they need a flower nearby in spring), depends on your resources. Build a Shed or Barn to hold all your Jars and Kegs. Keep making more jars and kegs as your resources allow and fill the building. Upgrade all tools to gold level. This bites into your budget, so it's up to you.
