What To Do With Artifacts

You can collect them and hoard them or you can sell them. They can be placed on tables as decorative items.

Some artifacts are used in crafting items.

Off the top of my head, ones you should keep for a bit are

-dinosaur egg, which can hatch a new dinosaur, who can lay new eggs
-Prismatic shard, which has several uses, most important is getting the galaxy sword
-dwarf gadget, which can be crafted into a farm computer

Prismastic Shard is Mineral, not Artifact. And don't forget Ancient Seed, one of the best seed in SDV.

Just gonna throw this out there cause it confused me at first: if you have the "artifact" version of the ancient seed, you need to donate it to Gunther and he'll give you a plantable ancient seed in return.

Bones can be placed in a bone... furnace? kiln? to turn into fertilizer.
Penny and maybe the Dwarf like some artifacts as gifts.
The dwarven gadget can be turned into 1 useful item later in the game.
Ancient seed and dinosaur egg can be used to grow a plant and raise an animal, respectively; donate the seed to the museum for the crafting recipe, and place the egg in an incubator if you want your own pet dinosaur. (Tip: You DO need 1 dino mayo for a late game thing, but there's a way to find other dino eggs easy later as well.)
Many artifacts can be turned into unique clothing via the sewing machine. (For example, I think the ancient dagger or whatever, can be turned into a Link/Zelda outfit.)
Stuff like glass, anchors, dolls and such have no real use outside of tailoring.

You do not absolutely need dinosaur mayonnaise for the missing bundle, there are other options.
My tip would be to use artifacts in sewing... Try the glass shards ;-)
