Not sure if the Night Market ever sells any.
This, sorry. It's a river fish that can only be caught in the river, in rainy weather during fall or winter. If you can craft a rain totem (any truffle oil lying around?) or buy one then you can manufacture an opportunity wherein the walleye might be caught, but otherwise you need to pray to RNG or wait till next fall.
Maybe you could try levelling up your foraging? Idk. If you can't, then all you can do is wait till next fall or till the travelling merchant has one.
Apparently the rain totem is unlocked at level 9. If you can get there before winter ends and have the materials to craft it (do you have truffle oil?), then you have a chance. The night market shouldn't interfere with this, your only deadline is winter 28.
I guess ill wait for next fall funny thing is is that it maybe rained once or twice during fall so it was really hard getting a walleye at that time anyway thx for the reply
Cart is just more random and could eb there over whole year I belive.
You can use Stardew predictor for both to see if it come sooner than next fall.

Seconding this, through the odds are probably not too good, and unfortnatelty the game doesn't have any sort of settable reminders by default, do you might find out that the Travelling Cart has a Walleye on Summer 5, only to forget about it in the several weeks that it takes you to play the game to get there.
Walleyes are also a possibility in Fall and Winter Garbage Cans, which Stardew Predictor will also let you investigate ahead of time.
