Even fish ponds can help a little, such as with Sturgeon. It takes a couple days to process in jars, but Caviar sells for 500g a pop (700g if you have the artisan bonus).
Even regular processed roe sells for a decent chunk of change.
And unlike animals, you don't have to feed them or anything.

But if you have the greenhouse, then you'll really start pulling in the profits.
I'm currently growing 8 units of hops in my greenhouse, I run them through kegs, and sell the pale ale, which generally takes about 2-3 days to refine.
(Hops process in the kegs faster than fruits, including ancient fruit)
As a result, I'm often getting close to 8-15k every day, mainly from the ale (and the animal products and caviar/roe).

If you have the bonus that gives Iridium quality to all forages, that also includes any winter forage crops you happen to grow in your field.
Sure, they're not ancient fruit, but they do grow fast (even without the speed-gro), and the profit margins adds up fast, too.
And it's not like your fields are doing anything else during the winter.
It's a lot more boring than fishing or mining, though.
Things like greenhouse or kegs/jars/animals is something you do voer whole year...
On the side note I really dont uderstand this topic again and again - like how you are playing the day other seasons? You are watering crops from morning to evening or what? I am trying leaving my farm around 10 am every day for whole year and dont find winter to be so much different to other seasons (only new wood can nto be get)
I'm also told the Skull Cavern can be really lucrative, and winter is a great time to pay it a few visits.
in addition to growing them just for their results (which can be great, especially if you have botanist), you can convert 2 winter seeds into tea saplings, which sell for 500g each
peak theoretical profit from selling the four ingredients that go into making 10 winter seeds is 1720g (that's assuming you make crystal fruit wine and age it to iridium, and have both the artisan and botanist professions)
with those four ingredients, you can make 10 winter seeds, which yields 5 tea saplings, which sell for 2500g
you do need to have wood and fiber for that to happen, but wood happens to quite completely grow on trees (even in winter if you use tree fertilizer), and fiber seeds grow in winter without any particular maintenance (they don't need watering, and don't care about season).
edit: above strategy does admittedly depend on a few things: you need caroline's event to get the tea sapling recipe, and you need to do linus' special order to get the fiber seed recipe (which in turn means you need it to come up).
Second year on? Greenhouse. Animal chores. Hitting the skull cave. Now, hitting the island. I just unlocked the new Island on the 4th day of Summer, 2nd year and I'm hoping to save enough cash and drops to get the obelisk that let me warp there (and figuring out how to get the obelisk to warp to the farm).
