Easiest recommendation from me is seasonal villager outfits. Probably my favourite mod. It might sound minor that all it changes is that the townspeople now have more than one outfit, but it has a deceptively big impact on my experience.
Other than that, NPC map locations is really handy too. Automate is also great, but it can have an actual impact on the game's mechanics and how you build your farm, so I'm separating it from cosmetics and QoL.
Those are my top recommendations, I think. If you want to add more NPCs or change the storylines of the ones already there, or simply make the game bigger, there's a number of other mods you could look into (pretty sure someone's gonna suggest SVE sooner or later), but I'll stick to relatively small scale changes.

Don't really like changing how the game plays much I use; Lookup Anything (extremely helpful, don't have to tab-out to the wiki constantly), NPC Map Locations, CJB Cheats Menu (only thing I use it for is to change your run speed as the default is painfully slow to me), Seasonal Villager Outfits, Friends Forever.

For me I always use some sort of fishing mod just because I'm not a fan of the fishing minigame

you can download them manually or use their mod tool called vortex
I wouldn't suggest using SVE etc until AFTER you've already played through the game once.
