So personally I'm going with the Master -enchantment. Less time between catches and larger bobber bar for easier time seems nice.
+1 Fishing would increase the size of your Fishing bar and, potentially, increase your cast distance. The benefits should be much greater.
You could make an argument for Preserving saving you time/money/hassle to get bait twice as often and the money/space to have double as many tackles in your inventory. At 100% I think I would have gone for that one, but "half hassle" is not much better than "normal hassle" because the hassle is still there.
Well I'm much better since my Noob post, I caught 32 fish in one day, it was rainy so I could do just that, fishing. So I go to the mountain lake, I grab a few there, but one is jumping up and down like crazy. I can't catch this guy for my life, even if I was SOOOO close once. What is this fish?
Then down to the ocean, there is a wild fish living there, I know it. When I catch it, he jumps right to the top and when I'm there he goes to the bottom again. 100% fail on this vile fish. What is it?
Then we have another in rivers, just driving me crazy: Ohh, I have him, Damn I have not. LOL.
Wiggle up and down like a mad fish, what fish is this? I haven't checked the Wiki for specific
fish yet.
I'm only lvl 5 in fishing, but I have the Iridium rod with Trap catcher, which helps me against the easier targets, but these rocket fish, I have no idea to deal with them.
I will keep this post in mind when I understand a bit more and level up a bit more I guess?

Depends on the season, time of day and exact behavior. If it was Spring, it could just have been a particularly feisty Largemouth Bass or Chub. If it was Summer it could have been a Pike, they constantly move up and down by quite a significant distance, like Chubs but worse.
You'd probably have freaked out if it had been the Legend, the unique legendary fish that only appears in a specific spot in the Mountain Lake when it rains in Spring, that one can move through the entire bar twice a second. But you'd probably have noticed the different fish icon (it has a little thing on its back) and I don't even think you can hook it at your fishing level.
In the Ocean, a fish that very quickly swims 3/4 up the bar and stays there for a couple seconds, and then either move up again or a long distance back down sounds in one go sounds exactly like a Tuna, but they don't appear in Spring. If it was raining and it was Spring it might have been an Eel. In Summer it could have been an Octopus, or if it was late in the day a Super Cucumber. These tend to move much more erratically than Tuna, though.
By the way you're describing things I'm guessing it's Summer and it was a Pike in the lake and a Tuna in the Ocean.
If it's Spring your descriptions don't match quite as well and you'd have overpanicked at the Lake, but I'm guessing a particularly feisty Chub and an Eel.
Your Fishing level increases the size of the Fishing bar. With the proper level/food/tackle/enchantment your green fishing bar takes up about half the size of the total fishing area so it's real hard for fish to get out of it.
I have doubts about the magic bait. It would only be useful during seasons that have weak and cheap fish, and the much wider variety of fish would make it more difficult to identify whichever one you've hooked and thus make it harder to anticipate their movements.
But the lure sounds really, really good. I just never found the recipe...
But there is still the lake by Marley's, I look at it and it's gone. I suppose my fishing skills just suck at lvl 5.
I keep on working on it, a little fishing for more xp right?
But I'm very good collecting seaweed and other junk. That should be my profession in this game. :)
The legendary fish in the Mountain Lake doesn't appear in Summer, so I'm afraid you have yet to experience that nightmare. It moves so fast and can dart literally anywhere in a fraction of a second, catching it is not a matter of skill, it's essentially a matter of maxing and buffing your Fishing and then getting lucky with your guesses.
Pikes would be your nemesis at this point, and interestingly these can be found in both lakes and rivers. There would have been some in the pond west of Marley's place (it indeed counts as a lake) and also some in the river just south of Marley's and Leah's places. These really love to zip up and down constantly, a good distance too, which makes them particularly tough.
Indeed, raising Fishing is your best bet! Fish a lot, try to get "Perfect" catches as often as possible (you get 240% normal EXP for Perfect catches) and Fishing will rise quickly. The game is very generous with Fishing EXP, I just started a new playthrough and went up to level 3 Fishing on Day 2 and level 4 on Day 3 even though I didn't fish all day on either of those days. With bait you can catch so many more fish per day, you get EXP twice as fast and the fish give more EXP so it all snowballs quite nicely. Even that Seaweed you've been collecting gives a bit of EXP!
I'm very glad you decided to give it a good shot. So many people give up at level 0 Fishing, but you went for it and now you're doing well. With a higher Fishing level and after learning different fish's behaviors, you'll be surprised what you can accomplish.
I know lots of people hate the fishing but I think it's very well implemented.

Holy moly. That damn Glacierfish. Even with max Fishing, Master enchantment, AND food buffs, that thing? Good friggin' LUCK people.
the bait is more fun than genuinely useful I guess, but some fish do have pretty narrow time frames in which they can be caught, like midnight carp.
and really, with something like escargot for +3 fishing do you need 1 more fishing level?
Depends on what you're fishing for. If something like Lava Eels, well I'll take all the help I can get.
