What new bundles has everyone seen in 1.5?
For those that have started a new game with remixed bundles like me, what are the differences you've seen? Mainly, what are the new bundles you've gotten so far?

So far I've only unlocked the first 3 rooms' bundles. In the crafts room, most of the foraging bundles are the same, however, the Spring Foraging uses Spring Onions instead of Daffodils now, and instead of the Exotic Foraging bundle, there's now a Wild Medicine bundle that requires 5 Purple Mushrooms, 5 Fiddlehead Ferns, 5 White Algae, or 5 Hops, with 3 slots to place them in.

The Fish Tank only has one change and that's a new Quality Fish bundle in place of the Specialty Fish. It requires Gold quality Largemouth Bass, Shad, Walleye, and Tuna.

Finally, my Pantry has multiple new bundles, but no changes to the old ones. So instead of Quality Crops, Animal, and Artisan bundles, I now have Rare Crops, Brewer's, and Garden bundles. Rare Crops is simple, it just requires either an Ancient Fruit or Sweet Gem Berry (simple, not easy). The Brewer's requires a choice of 4 of these 5: Mead, Wine, Juice, Pale Ale, or Green Tea. And then the Garden bundle also requires a choice of 4 of these 5: Tulip, Summer Spangle, Fairy Rose, Blue Jazz, or Sunflower.

So, is this what everyone else has? Or maybe some other combination of new and old bundles? What about the other rooms I haven't gotten to yet?

These are do fun. Like you I found quality fish, rare crops and brewers. My animal bundle wants 2 large eggs and 1 regular, no goat cheese. My adventures bundle wants bone fragments instead of bat wings. Probably some other differences I didn't notice.

I've only just unlocked the community center but I have completely new bundles in both fishing and pantry:
Pantry, I got both the Brewer's and Garden as listed above

Fish Tank - Master Fisher's Bundle requiring 2 of the following 4: Lava Eel, Scorpion Carp, Octopus, Blobfish

I also have a couple of changes, for instance the spring onion mentioned above as well as Quality Crops now shows my options as Blueberry and Yam instead of Melon and Pumpkin.

The Master Fisher's Bundle is a bit of a beast and is going to be a challenge for a year 1 completion for sure. I'm only ok at the minigame so, except for Blobfish, not sure how long this one will take me to get - thank goodness you only need two of them.

I LOVE that Brewer's Bundle, and like the Garden Bundle especially because they took the place of the Animal and Artisan bundle. That animal bundle was always my Greenhouse nemesis so nice to have a different route there but I guess this means I now have to actually make nice with Caroline for a while instead of totally ignoring her like I typically do.
