General rule: Mods that overhaul the asethetics are always fine to install mid game and to deinstall. It basically just swaps the sprites with something else. There are no scripts involved that breaks your game etc. Think of it as those old paper doll dress up games when you were a kid. The base(doll) is still untouched and you can dress them up in many paper dresses as you like.
SMAPI is just the mod launcher that injects the mod files into your game. Works with old saves. Same goes for framework mods like content patcher.

I was playing multiplayer, hosting with 2 family members joining me, and when i added a bunch of mods to the game, they were no longer to load into my farm. So remember to check that some mods don't work with multiplayer, or with some mods all players must install the same mod to play together.
Also found that since I have so many mods, when I joined another players host farm, I still had access to my mods that they did not have. This created some interesting effects on the farm. For example, I would race around on a tractor, but they would see me on a horse. If I planted crops on their farm from a mod, they could not see the crops or harvest them.
