How does hilltop farms quarry work?

So I just started a new file and picked the hilltop farm. I've never understood how this or the quarry by the mines work. Is there a helpful guide or explaination someone can give me please?

Also epsecially do I keep the normal rocks and they turn into something else or should I break them so new ore spawns?

It helps to clear it out to spawn ore and geodes, rocks still spawn but it's always useful to get those. The tiny quarry is useful to gather little bits here and there so you don't have to run to the mines every time. There are times when only rocks spawn but still it has it uses.

It doesn't work well, if that's what you're asking. It spawns tons of crap rocks which never improve, and rarely spawns useful ore rocks in a meaningful amount. It's really only worth checking once a month/season or so.

How it SHOULD work, is have the quarry only produce useful rocks. Ore, gems, geodes, and the "stone" rocks which always give 1-3 stone and/or coal. Instead, it spawns tons of crap.

Hilltop's quarry is mildly useful early on, when you're a few ore short of the bars you need, sometimes the quarry will help you out. Late game, many people just build over the quarry and put sheds or something there.
