Your best bet if you want one cabin in particular is to start your game out and run the first day on your own, build the cabin as soon as possible, and then have your friend join. (According to the wiki, cabins build instantly. 100 gold and either 10 stone, 10 wood, or 5 wood and 10 fiber.) Otherwise, if you feel comfortable editing Stardew save files - which is dangerous and can destroy your save - I'm willing to bet there's a way to change the style of building after it's built..... somehow.
EDIT: Correction, I don't think you can go co-op until you have cabins, so you probably have to start the game single-player, build the cabin on the first day, finish the day to save the game, go back to the main menu, and then load again as a co-op.
Quick edit: Idk if it'll break that save file once you switch back over to Vanilla gameplay, so try it on a new save and find out! I'm currently too lazy to do that...
