Midnight carp?

My friend and I have been playing a new co-op file for a whole in-game year now and have been fishing our butts off almost every night (in fall/winter) at the place where Midnight Carp are supposed to be between 10pm and 2am. Not a single one has been caught. Are we doing something wrong? Even the Night Market Submarine didn't yield any new fish, even on great luck days.
We're not exactly pros at this or anything, so we're probably just missing something really dumb and obvious. We've just been using the stardew wiki. Please help?

Are you playing with mods or is your fishing level too low? I fish midnight carps easily. If you're playing a 4 corner map you should even be able to catch them in the big pond on the lower left corner. Night Market is working as well, but you need some skill to catch those fishes.

Uh-oh, what level do we need to be for fishing? I hadn't seen any level requirements. I believe I just hit level 8 and my friend level 7. We are playing with a small handful of mods, but I didn't think it was anything too game-breaking. I'll try turning them off! Thanks for the feedback!!

I don't see any level requirements on the Night Market fish or the Midnight Carp listed in the wiki. Are you using the training fishing rod? If so, try one of the regular fishing rods (bamboo, fiberglass or iridium).
