5. Whatever I feel like. I have two of every kind of fruit tree around the edges and then some ancient fruit, some cranberries, some starfruit, some strawberries.
2. You *can* put them in the middle if you want, though the middle is best reserved for crops.

4. Weeds don't grow, and soil does not need to be hoed at the start of each season.

I have 24 plants of each of the seasonal berries (i know its not the best way of making money i planted them before the update which nerfed them and its just nice to have them in there otherwise) the last quadrant is ancient fruit. For the extra 2 rows i have some peppers and tomatoes for cooking.
I like how the trees on the border of the greenhouse was once a bug. Patched out. but returned an update later as a feature.

I typically do a bunch of quality sprinklers, like, 1 for blueberries, 1 for cranberries, 1 for ancient fruit, etc. as well as a few sprinklers for loved gifts.
The more popular idea is to line the walls with fruit trees (I think I fit 14 in there comfortable, without getting in my way) and fill the actual soil with some combination of starfruit, hops, cranberries or ancient fruit. Fruit trees are a waste, financially, but if you don't care about maximizing profits and just think peaches are neat, then yes, you can totally plant like 40 trees in there.
Look like I need to head back into the mines to get some quartz for those sprinklers.
