In general, hold on to everything that's not a crop - i keep at least 10 of each crop, foragable, or fish just in case i need it later. This proves well with fishing ponds, I have 16 of them going at once so i always need random things to keep them growing
1.4 added two more ways to get one, a dialogue with Willy if you have full crab pond and artifact troves (the wiki doesn't give numbers but it's most likely another very low rate, though it can be predicted with Stardew Predictor).
