EDIT: Looking this up, you can eat 7 stardrops to reach the max amount of permanent energy, so... 28 stardrops should be found in the game world.
Maybe add in multiple chests in the mines, but make them only visible to each character?
So a lv20 chest, player A sees and opens one, but player B sees one and can open one too.
The game tries to 'sync' everything at once, but not everything has to be synced for balanced purposes if needed.
For instance if buying a backpack upgrade at a store, I think each player sees a different backpack based on their own progression, it's not the same set of upgrades that's limited for the entire playthrough.

Interestingly, he got to get the forest one at the same time as me without having to pay the price. He just collected his right after I did mine, and it didn't take his item.
Old Master Canolli: Berry activates statue, Everyone can get it.
Stardew Fair: Tokens are seperate for each player, everyone can buy their own Stardrop
Krobus: All players can purchase.
Master Angler: Each player will receive mail when they catch every fish themselves.
