What should I grow in my garden pots?
I have 20. Not sure what to plant tbh.

Trellis crops seem to be a great choice as you have to position them in a way that you cant walk through them AND since sprinklers can't hit pots, you tend to position them in ways that maximize your iridium watering can. I'm going to go with grapes just bc grape jam sounds like something a farmer would make lol. If I were trying to maximize profit, I'd go with hops all day every day.

that seems arbitrary.

Assuming a floor space. 100 kegs 100 pots ancient fruit would get you 3.7M per year.

67 kegs 133 pots starfruit would get you 2.9M

More if we deluxe speed grow the starfruit.
Take it up with chucklefish. Regardless, under indoor circumstances, hops destroy ancient fruit by 100 gold a day per plant.

I haven't used them yet, but I'm assuming sprinklers don't work on them even when used outside? (such as on forest farm grassy spot) Do you need scarecrows for plant pots?

The best use I can think of would be to place flowers all around the map along with beehives in places like the quarry or train station. Only problem is you'd have to hand-water them.

Indoors, I guess either plants for gifting or maybe coffee?

OK, indoor conditions.

67 pots 133 kegs. 3.15M per year on the hops.

so no. per indoor tile of space since you'd need more kegs with more hops plants ancient fruit does produce more per tile.
*sigh* no. Hops are 420 gold per day assuming greenhouse conditions. Ancient fruit is 330. Here is your forumula:
Hops: 300(1.4)/1=420
Ancient Fruit: 1650(1.4)/7=330

Hops produce 210 per tile. (1 for plant, 1 for keg)
Ancient Fruit produces 165 per tile (1 for plant, 1 for keg)

Each requires 1 keg per plant. Math is fun!

Currently, Garden plots don't affect bee houses. WHEN (if) they ever do, that will be a huge use for them. As it stands, they're pretty much only good for hops.

I mean, I'll probably use them as a decoration if nothing else, considering the plants won't wither indoors. I just don't see their practical use as a moneymaker - you can't use them for beehives, nor ancient fruit, sprinklers don't water them... I've personally had enough of hand-watering crops on a daily basis. It takes too long and isn't worth it, for me.

For decorating the town, though, that might be neat. Pity we don't have more ways to decorate the town. I miss when we could plant fruit trees around down, it made it look so much nicer.

I have a feeling they'll work for bee houses before the full release.

Well, for a bit I had beets in mine, now it's grapes, corn, and hops I believe.
