Fruit trees are very expensive and their return on investment is awful. They would also be most useful after you have a greenhouse, but you need to get past the 'fruit bundle' before that's unlocked.
Why do you think shrooms are better? I much prefer the fruit cave, it's really handy to unlock the greenhouse early.
The Bat Cave on the other hand gives somewhat reliable access to the fruits that are very useful for the bundle early on, and make for more universally useful gifts. And of course it's your very own bat cave, how cool is that?
Overall, both have their advantages and downsides early on. In the long run, both aren't all that useful: Life Elixiers can be bought from our little friend near the Mine if you really want to use them (other types of food provide much cheaper restoration options), and Fruit Trees give easy access to lots of fruit later on.
Tbh I just end up forgetting that the cave exists after some time. This is another reason why I think the bat cave is better, cause though neither is that useful in the long term the bats are very handy to unlock an important farm upgrade, whereas the mushroom cave builds up to very little outside of some extra income. Fair point, though.
I have favoured pale ale instead of wine. Wine can sell for a lot, but it takes 7 days to process, so you better put something real good in it (i.e ancient fruit/starfruit).
For a comparison, let's assume you're processing peaches or pomegranates, which are the most valuable fruit at a base price of 140g. This is pretty valuable, and pomegranate/peach wine sells for a base of 420g. HOWEVER, it takes 7 days to process.
Hops turn into pale ale, as the wiki tells me, after ~1.5 days. These sell for a base of 300g. In 7 days, you can produce 4 pale ales, which sell for 1200g, close to 3 times more than you'd get for making pomegranate/peach wine in that time. Consider also that hops produce every day and one trellis doesn't cost you 6000g.
Jelly is probably more viable, but higher value items/good roe are still preferable if you're producing them. Expensive crops like pumpkins (320g) or melons (240g) are prime fodder, though if you chose to spam something else for the season (e.g profitable but cheap blueberries and cranberries and also hops) the fruit trees definitely become more valuable.
I'm sure fruit trees can work, especially if you have a stock of them and winter won't let you grow very good items in bulk, but in my experience they have never been a very good investment.
Did you leave the backup save (the one with the _old in the file name) untouched? In that case, you can copy-paste it, delete the messed up save file and rename the new file to match the name of the file that you've just deleted.

The mushroom cave provides five mushrooms. One is fall seeds (or mushroom tree), two are mushroom tree only, and two are otherwise impossible to grow on the farm and available in limited quantities off the farm.
The mushroom cave gives you access to more options than the fruit, and at the same times means you are not selling food that has been contaminated by bats. These are good things.
