Your idea's would turn it into an Action-RPG with a lot of fashion choices.
I would suggest: go and play an Action-RPG.
But i also would change one thing about the game:
If you die in the mines you lose a huge part of your inventory and the game doesn't tell you what was taken away, making it hard to decide if you restart the day or just let it slide.

A hunting mini-game would be neat. I mean something like go into the wilderness and hunt wild game.
Also fix the ranged weapons.
This! 110%, this. My memory isn't the best, and after I get revived, I find myself staring blankly at my inventory, trying in vain to piece together what was lost.
