Again, sorry if this is insultingly obvious, but I don't think there's any ideal location for grinding rock crabs besides the levels in which they spawn.
One day should really be enough time for the quest though, even if you just run through the mines normally. Just bring some food so you don't run out of health/energy, and a chest that you place near the elevator (before entering a floor) so you can empty your bags between the runs.
If you want to cheese it though, go to level 20, take the ladder down to 21, have a look around and see if there's any identifiable rock, and if not, take the ladder straight back up. Then, repeat the progress. Since you're entered a different level (20) before heading back to 21, a completely new level 21 is generated whenever you enter it. As a result, you don't have to run around, destroying rocks, wasting time while trying to find a ladder.
This method also works great if you're after a specific ore to mine (but the overall loot will suffer in the process).
