At what point do you consider having beaten the game?
I've gotten really far in my first save file, and I feel like there's nothing left for that save to do. I made friends with tons of people, got married, had 2 kids, unlocked all the livestock houses, got all the buildings from Robin except the slime and horse ones, completed the dungeon, and fully repaired the Community Center. So... what's left for that guy to do? I don't see the appeal of just earning more and more money when there's no quests left to do besides the bulliten board. I don't see anything left for that character to do. I even did all the Post-game witch stuff. What else can I do with that character beyond getting more money that I won't need for anything?
I'm fine with starting a new save, but at what point have I done everything that needs to be done?

When you have all of the achievements.

The game pretty much only offers two goals: the Community Center and, to a lesser degree, the Evaluation. That's possibly the game's top weakness; it's a sandbox game with not much to do.

You can try a few "challenge" runs, but since there are no alternative game modes, you're very limited in what you can do.

Some people turn to mods. Unofficial content is technically still content.

This. Pretty much whenever you've accomplished YOUR goals, and want to show off your farm. I've done runs where I didn't bother training farming, or didn't bother getting married.

For example, here's a farm I did based entirely on Foraging, Mining and Combat. No Fishing or Farming at all, both skills at level 0. https://upload.farm/static/images/1/1CIt8b/1CIt8b-m.png

And here's my Wilderness farm, which is "done", but also has room that I could keep working on it if I needed to. https://upload.farm/static/images/1/1D37uj/1D37uj-m.png

Was that foraging farm fun? It seems like such a different way to play. I've done two farm/fish games, this might bring me back for anothe run of SV.

To answer the OP:
My first game's goal was to complete the evaluation and "win the game." Which you've done.

My second game had to have a specific goal to get me back into Stardew Valley. I started out with the aim of making an artisan farm using the forest map (creating syrup/wine/cheese/jams) while filling the mueseum. This turned into getting all the achievements (except Prairie King--still haven't gotten that one yet, I'm not sure if I will) became even more work than the first game.

This artisan side of the game was fun. However, the achievements became very tedious as I tried to get the last couple of artifacts (It took five in-game years to finish finding the last two). It really broke the fun of the game for me--I would not suggest making the achievement grind a goal on its own, there's too much RNG going on for that. Just let them come naturally as you enjoy the game.

My third game was just to get the Joja achievement--a very different style of playing in some ways, with far less going on as I just focused on making money on the farm. It was easy but unrewarding.

I'm planning on making my fourth game as relaxing as possible, and since you've done so much in your first save, it is the one I'd suggest for you.

Try making a farm layout that is meant to look good and something you'd enjoy living on instead of focusing on min/maxing the land and time you use each day. Just relax and enjoy the game world. I might give Kinda Fail's idea a try.

You don't have to do it if you don't want to.

I have 37/40 achievements and I don't intend to get the last three, which would be the two Prairie King ones (because that's got pretty much nothing to do with the game) and the 10 million gold one (because it's just too easy and boring for me to care about it).

It's all good.
for me it was when i completed decoration my darm, got married with like 80% of the town at 8 hearts, and did all the achievements that wasnt a pain or rng based (looking at you museum collection)

To me unlocking all the animals (including the blue chicken and dinosuar and slimes), getting all the achievements, setting up a farm that makes you beyond rich, getting a good evaluation, getting married, and reaching the end of both the mines and the skull cavern is pretty much completing the game. Though starting up a second save just to go the joja route will help get all the achievements. lol.

You can't beat SDV. Simple.

Well.

Good luck with that.
