Check out Stardew Valley Expanded. This adds new events and NPCs. I heard it was good. I also recommend seasonal villager outfits

Seasonal villager outfits, simple crop labels, and expanded fridge. Pretty much all i've traditionally used. I'm trying out SVE, gave me a few issues at first but those seem to have been from its optional farm map.

These are what I am gonna download now for my new playthrough after years. These are just what I first thought was gonna be needed after going through the mods on Nexus.

NPC Map Locations
Stardew Valley Expanded <--- Have to check wether some of the other mods are part of this collection, if they are then I will not install those certain mods. And I will come back here to give a final list of what I have personally planned to have in the game.
Lookup Anything
Gift Taste Helper
Tractor Mod
CJB Show Item Sell Price
------------------------------------- Recommended from the people from Stardew Valley Expanded
Seasonal Villager Outfits
Seasonal Outfits for SVE (Vanilla Style)
Dynamic Night Time
Climates of Ferngill (Not sure about this one, reason being, I am not a fan of being blinded by snow, just seems annoying more then anything)
--------------------------------------
Expanded Fridge (Seems like a neat mod after @Man Fighting a Shark in a Speedo mentioned it and I looked it up.

How is fishing now in the game? When I played it, it was fun, but got annoying sometimes (personal issue with the game)

AUTOMATE

Yep. Automate and Chests Anywhere are my top two. There are also some great new maps out there that are fun to play.

The tractor mod is exceptional. It basically performs many actions in a 3x3 grid around you (so under yourself and all adjacent squares), so you can rapidly till land, sow fertilizer and seeds, water crops, and harvest crops, much more easily and faster than normal. With the high-ish cost to acquire, I feel like it's a "fair" mod to use.

Automate is also incredible once you've got everything set up. If you like making things in the kegs and preserves jars, then this is a must-have. It's also great for smelting lots of things, for use with crab pots, connecting to auto-grabbers. Just get this mod.

Chests anywhere is great. It's bothersome to carry all tools around, especially if you need them for just 2 seconds, like the copper pan, or to hoe some worms. Being able to access your chests from anywhere is great, and if you think it's "cheaty", I think you can limit it to just the chests in the current area.

I've been having loads of fun with SVE. It does require installation of a number of other mods, but the mod creator has a solid guide that walks you through it. It adds areas and NPCs and is really just lovely.

There's an updated version, the one posted on Nexus just hasn't been updated.

@RandomGuy Ok, didn't know that they had different versions depending where you looked. Any idea on fishing mods? Playing now, and some fish are just impossible to get hands on.

I play with:

Stardew Valley Expanded
Custom NPCs - John, Lyell, Jade, Sorren, Paul (good if you like extra storylines)
Buffalo Ranch / Boarding House (the storylines arene't great here, but I do like Gregory and the Abandoned Mines)
NPC Adventure (so you can have the Vanilla NPCs follow you and help you/give you certain buffs)
Mermaid Island

Artisan Valley (can be overwhelming with how many new artisan goods and machines there are though)
Better Farm Animals Variety
Trent's New Raccoons (they bring you loot everyday, it's often some quick cash)
Farmer to Florist (your gardens will be absolutely BEAUTIFUL)
PPJA Mega Pack (adds a lot of extra crops, trees, etc.)

BIGGER BACKPACK
AUTOMATE (note it doesn't work (yet) with new machines like in Artisan Valley)
HARVEST WITH SCYTHE
NPC MAP LOCATIONS
STARDEW NOTIFICATIONS
** THESE WILL MAKE YOUR LIFE SO MUCH EASIER

Aesthetic:
A Toned Down Stardew Valley
Eemie's Map Recolors
GetGlam (for when you want to edit your character)
Custom Music (lets you download any audio mods)
Daily Screenshot (takes a screenshot every morning so you can watch your farm progress)
Seasonal Villager Outfits
Seasonal Villager Outfits - SVE (if using SVE)

Realism:
Dynamic Night Time
Happy Birthday (now you can have a birthday too!)
Babies Take After Spouse

Note - There are many basic mods needed to make the above work (SMAPI, PyTK, Content Patcher, etc.). Check the mod page to know which ones you'll need to download.

There are a lot fishing mods that makes fishing easier although it is kind of cheating but honestly I agree with you the fishing mini game is kind of annoying. You can check out the following mods below

Fishing Made Easy Suite (Content Patcher)
https://www.nexusmods.com/stardewvalley/mods/3623?tab=description
https://www.nexusmods.com/stardewvalley/mods/1915 (Content Patcher Mod)

The Mod above requires the Content Patcher mod

CJB cheat menu- This is the one I use you press P it opens the cheat menu and you go under Farm & Fishing and enable instant catch and Instant bite...etc it works really great just ignore all the other cheat options if you don't want to ruin your game.

Skip Fishing Mini Game

Instant Fish Catch mod and guide

Hope this helped
