Barn is more tricky due to friendship mattering more, and autograbber not working on truffles. So I'll just assume maximum friendship with every animal, and maximum effort put in.

Pigs: I believe they're guaranteed to find 1 truffle per day, so if you have Artisan, you get at least 1491 per day, per pig. However, they don't go outside during rain or Winter, so... I dunno, let's say 6 weeks out of a total 16. So every year, 1 pig would give a minimum of 1.5k x 70, which is pretty decent. A pig will make you at least 105k per year, but give no money during winter.

Cows: They give 322-483 every day. They produce milk regardless of weather. So about 45k per year, per cow.

Goats: On average they'll give you 280 every day. If you age all your goat cheese, however, it's closer to 550 per day. Without aging, goats will typically give you 32k per year. If you age all of it, it's 61k per year.

Sheep are tricky. With the Shepherd perk, they'll produce wool every day, and require less petting, and get a 20% sell price increase, so you'll get 564 every day from sheep. With Artisan, however, you'll get 658 per wool every 2 days, or 328 per day. 63k per year per sheep with Shepherd perk.

So overall, pigs are the best, if you're willing to sacrifice some space outside that can be used for crops. They're better than every animal by about double in some cases. But, again, you lose out on lots of crop space.

If you plan to keep your barn animals locked inside forever, sheep are the most profitable animal if you plan to focus on them and take the Shepherd perk. However, the Artisan perk is EXTREMELY good since it works with both crop and animal products, so assuming you take that...

Cows are the best barn animal if you just want to use an auto-feeder and auto-grabber. You'll get 4.8k per day from your barn with 12 cows. If you're willing to put in the extra effort with goats, and age the product, you'll get 6.6k per day from a 12 goat barn. 12 sheep with Shepherd is 6770 per day. 12 sheep with Artisan is just under 4k per day, which is worse than cows. Pigs require quite a bit of land to roam around, so I'd argue them making 105k per year is kinda slashed in half since you need to sacrifice typically the space for a second barn, at least, to give them room to roam.
