Today I learned
That when farming for earth crystals in the mine, don't use explosives. I had dropped a bunch of money to get copper and coal and made a bunch of bombs to make the mining process faster to get more of the earth crystals (I was needing more to make more mayo presses). Long story short, went through a stack of 25 bombs, and not one earth crystal drop. I go to the wiki to see if I was on the wrong level in the mine, and thats where I saw the words that made me rage for a second. "Explosives can destroy earth crystals" #PicardFacepalm #FacetoDeskSlam

That doesn't really matter, though.

Earth Crystals are forageable minerals. You can see them.

If you see one, just don't blow it up.

I thought that you had a chance of obtaining them via destroying rocks and such in the mine.

Possible, but I don't remember ever seeing that happen.

I find the vast majority of mine simply laying around, like Quartz, Frozen Tear and Fire Quartz. It's those that can be destroyed by Bombs since they're actual objects on the Mines map.
