You'll also find some spicy eel and fried eel from killing Serpents (the dragon things); while you wouldn't want to rely on that for energy it will certainly be a useful boost, and the luck boost improves your chances of getting deeper more quickly.
The ultimate Skull Caverns food is probably pumpkin soup, since it improves both luck and defence. If you've got cheese, then you've got half the ingredients already (i.e. the milk); and growing a massive crop of pumpkins during Fall (or just keeping a few growing at all times in the greenhouse) means this food is relatively easy to stockpile.
