Starting a new farm doesn't erase your old one, nor is there risk of accidentally overwriting since it's an autosave function. You're encouraged to try out the other farm type just to experience them even if you don't plan on playing them all the way through- and nothing will stop you from going back and continuing your current file. That being said, if you're worried about losing the progress you've made, definitely don't go screwing around in your save file without a reliable guide (and a backup).
If you're not enjoying yourself to the fullest because of the restrictions your current layout pose, there's nothing wrong with a little variety.
Just make a new file and play through spring. Then go from there. Either keep the new farm or go back to your old one.
Yeah.
