As for spaghetti, I like to put in a dash of sugar to balance the acidity of the tomatoes. Never tried cooking it with wine though, might be interesting.
I CAN ASSURE YOU IT DOESN'T TASTE LIKE GRAPE JUICE, I CAN'T REALLY DESCRIBE THE TASTE, IT'S SORT OF A SWEET, FRUITY TASTING NOTE, WHICH COMPLEMENTS THE TOMATOES REALLY WELL - BUT OF COURSE THAT MIGHT DIFFER DEPENDING ON WHICH KIND OF WINE YOU USE.

Yup, red wine in spaghetti is like what a lot of germany do when they add cream to carbonara, just wrong and disgusting.
