Yes, they'll be fine indefinitely. Only planted crops are affected by the season change.

you might also want to save your crops so that you can do different things with them as you level up.

ok i pretty new to the game but my tactic was planting my crops in spring and harvesting them and repeat that during spring and store them in my chest same things with summer crops and autumn crops and just sell every crop that i have stored during winter time. Woods and stone i thought of chopping and save them aswell not sell though just to make a lot of money so that i can upgrade my house does that sound like a good tactic?

The thing about SV is that you can play it the way you want to.
For me I can't see the benefit of storing all your crops instead of selling/processing them as you would be spending the better part of the year without enough money to upgrade your tools or buy saplings or the more expensive crops.
However there's no time limit on the game and however you do it you will get to where you want to be eventually. As long as you're having fun, that's the main thing.

Like ehyder I keep some of the crop for stuff later in the game and sell/process the rest.
