TL;DR: Ancient Fruit are only worth less if you look at gross profit instead of net.
Edit: Well... I guess if you plant them in the greenhouse they would.
Ancient fruit is worth less, but regrows - it's comparable to starfruit if you factor in the regrow time (I think once a week, vs starfruit's 2 weeks?) and the fact that you need to re-buy starfruit seeds.
Basically, it comes down to how many kegs you have. If you have one shed full of kegs, you can do a mix between starfruit and hops for maximum profit. If you have 5 sheds full of kegs, you'll want hops.
If you ignore growing time,
Pale ale: 420g * 28 harvests * 4 seasons = 47,040
Ancient wine: 2,310g * 4 harvests * 4 seasons = 36,960
Starfruit wine: 3,150g * 2 harvests * 4 seasons = 25,200
But, you will need a lot more effort to process pale ales instead of ancient seeds. And, you can make a greenhouse as an ancient seed factory and make 50+ in a year with ancient fruit wines.
It is also most convenient, since you plant once and have a full week to plant your farm before you start losing harvests so there's plenty of time for Deluxe Speedgrow, to get you an extra harvest per year.
It's most convenient because Kegs are the best money for your crops, because space for machines is not limited (they can be placed off farm). Ancient Fruit is a one week turnaround on Kegging, compared to running Hops every other day. You process your crops faster, so you need fewer machines to keep pace.
