Strawberry: Only available from the Egg Fesitval, the Strawberry is the highest base profit spring crop available. If you just want to grow a crop and throw it in the bin, this is the one you want. In order to have it for the whole season, though, you will have to buy it the year before. Tying up a significant amount of money. Not recommended. However, even if you plant it the day of the fesitval or the day after, it will still yield more profit per day than Potatoes.
Rhubarb: Available from the Desert in Year 2 on, Rhubarb is your go-to crop for midgame if you are building a Keg farm. It is similar to Cauliflower, except that it's a Fruit, so it yields significantly more money from Kegging. If you are concerned with overall profit rather than ease of use, Kegs are the way to go. Rhubarb is your stopgap between the potatoes of Year 1 and the ultimate goal of Ancient Fruit.
Ancient Fruit: No, you won't get a harvest in Spring. However, Ancient Fruit and Kegs is the maximum annual income, beating out Hops & Starfruit due to Spring and Fall having pretty pathetic options for Kegging. The popular approach to an endgame, max profit farm is Ancient Fruit in every available tile of the farm. Since Kegs can work anywhere (the Desert is a really good place to pave with Kegs).
Rhubarb (~ 13.46 coins per day from culture), but you CAN'T get it in the first spring because it is bought in an oasis location, and beginners do not have access there.
Potato (~ 11.67), Cauliflower (~ 11.50), Kale (~ 11.17) have about the same benefit, but it is worth noting that Potato has a benefit based on the case - this culture itself is not as beneficial as the other two however, she has a 20% chance of picking a second fruit, and if you count the 20% as a constant average value in calculating the benefits, then the potato is in the top three.
Garlic (~ 8,75), you can not get it in the first year.
Green Bean (~ 8,57) is planted once and yields until the end of the month.
Parsnip (~ 5.75) is the fastest growing and cheapest culture.
The "coins per day" benefit is approximate and calculated as an average value for a silver quality crop, therefore data may not be accurate for each person depending on the fertilizer used, good luck of the day and the level of farming skill (as well as the perk taken on the additional cost of selling products) .
Strawberries are one of the most profitable crops, even if we plant them in the first year, losing time (buying seeds at an egg festival cost 100 per 1 seed. The crop grows after 8 days, then every 4 days. Thus, by planting seeds 14 we will get the first crop 22, and the second 26), but the culture is expensive to acquire. Potatoes and Kale are relatively inexpensive (50 and 70 per seed), and at the same time they grow quickly - 6 days. Cauliflower grows 12.
It is worth remembering that cultures need to be poured every day, which means spending time and energy, as well as stuffed animals so that the crows would not sit down.
Giant crops also exist in case you farm Cauliflower, Melons, or Pumpkins:
1% Chance per day for each watered 3x3 grid with the same of plants of one of these.

If you get your hands on any +farming food:
It only has an effect while planting seeds, not while harvesting any fruit / vegetables.
Boosters:
Growth boosters work on plants that keep on producing only for the very first growth phase, not for the repeating growth phases after that. The repeating growth phases also vary per plant type.
Quality boosters only work for the very first vegetable / fruit harvested, not for additional drops, as they're possible with some plants.
Using any booster on a tilled tile keeps it active the rest of the season, except when there are random disturbances that remove them (worms...) or you don't use the tilled tile, as then it reverts to generic dirt ground.
Lightning Rods absorb lightning strikes that would eventually otherwise hit any of your trees - as long as one is still available that's not currently producing a battery.
Foraging:
During the right time of one of the seasons listed below it may be worth it to make a short tour through the southern area to get some free items that can be used to cheaply replenish energy when needed. Eventually with some +foraging food used to increase item gains.
At each bush with some fruit on it you'll get [1/2/3/4] of these with foraging skill [0/4/8/12].

Bear's knowledge[stardewvalleywiki.com]: After this quest these two items are worth 3x as much when selling them. Products made out of them are unaffected by this but may be affected by the Artisan profession choice (available with Farming skill 10 after 'Tiller' was chosen with farming skill 5), which increases the sell value of Jelly, Wine and other artisan goods by factor 1.4x
