Why would you need kegs in the cellar instead of casks, though?

You can spam the kegs in a shed somewhere, but you need casks in the cellar to produce aged goods.

Unless ofc, you don't care about aging the goods, which is fair.

Personally by the time I get a casks, the game is almost over. I always set them up, but once the farm is "done" I usually start a new game.
