Eggs vs mayo

My farms only in year two but I'm leaning pretty hard into chickens so far and I was wondering if it was worth it to make iridium quality eggs into mayo or if I should save them for recipes or gifts? So far the price seems to be pretty comparable when I sell them (iridium star eggs and gold star mayo sell for around the same amount it seems).

The quality of the eggs does not affect the quality of the mayo. Gold star eggs and no star eggs give the same result, so if you are making mayo, you can just use basic no-star eggs.

But size does matter. Large eggs do make gold quality mayo, whereas regular eggs make regular mayo.

So far as I can tell, the star/size/type of egg is irrelevant for cooking recipes.
