Adding Maps to the Start Selection
Im noticing in the modding community there are a lot of great maps, is there any way to add them to the selection at the beginning of the game without removing/overriding the original files?

I can see that each of the original maps has a .xnb file in the /stardew_valley/content/maps folder but Im unsure if the game calls for the map after initial load and what would be necessary to add them in for the original selection.

Can try that mod, might be what you are looking for. From part of description:

- Manages custom farm maps/types.
Stardew Valley only allows 5 particular farm maps at all times. Originally, most map modders would simply replace an existing farm map with their own. This is no longer needed, as MTN will manage and support an arbitrary amount of custom farm maps/types along with the original five maps. In addition, players have the ability to control the spawn of debris they start with.

I read the MTN Mod, I still don't get it..... we need to make an asset package with this as well? I'd like to see one SIMPLE enough to where I just replace .xnb file with our own.... but that might be wishful thinking :p
