Screenshots that you made by using the Steam Overlay can be found at:
<your Steam installation folder here>\userdata\<your Steam ID here>\760\remote\<App ID of Stardew Valley here>\screenshots
Your Steam ID:
It's shown when you click your Steam Icon (top right) - check the URL Steam shows then. The formatting is:
https://steamcommunity.com/profiles/ <your Steam ID>/
If no URL shows up then you've got to click topleft on the Steam menu -> Settings -> Interface and make sure the setting to show the Steam URL when available is active
413150 is the app id of Stardew Valley in Steam's Database as found on https://steamdb.info/app/413150/ or via Google seach: SteamDB Stardew

I found no information where Stardew Valley stores it's screenshots for the GoG version of it.
While playing Stardew, go to Options. Take your screenshot with the little camera icon (scroll down to the bottom to find this).
Beneath the icon is a button that says "Open destination folder". Click it. Voila! File Explorer (in Windows) will open up the correct folder where your screenshots have been saved. Mine were found at:
C:\Users\User\AppData\Roaming\StardewValley\Screenshots
Hollow described taking a normal screenshot of what you see in the game window via the Steam overlay and where to find those pics.
Whereas AtomicRabI3it & pelari described how to take screenshots of your full farm layout and where you can find those afterwards.
Stardew Valley's built-in screenshot feature, which lets you take a picture of the whole area you're in, stores its screenshots at "C:\Users\%USERNAME%\AppData\Roaming\StardewValley\Screenshots".
(Feel free to paste that in your file explorer, %USERNAME% gets automatically replaced with your username by Windows.)
Steam's screenshots can be easily found by opening Steam and right clicking a screenshot in the Post-Game Summary screen, where you can then click "Manage screenshots", and then "SHOW ON DISK".
