Most important mods should be updated in a few days of these types of releases usually so one can only hope that's the case here to enjoy the new content.
My point is that there's no reason to risk anything.
A simple option to opt out of all updates would solve the problem.
Other games have it.... why not this one?
A point I 100% agree with.
You can do the following:
1.Enter in your browser (Alternative: press window key+r) and press enter: steam://nav/console
2.Type the following: download_depot 413150 413151 3080804457574934302
3.Wait until the download (there is no download progress) is finished
4.Go in the Stardew Valley installation folder and delete/move all existing files
5.Move the downloaded files into the installation folder

That being said, I mean... it´s modding. There´s a reason most devs in favor in modding also make sure to add in the game´s terms of service a part where they specifically said "we are not responsible for your experience the moment you decide to alter the files".
Maybe some of the most popular mods features will eventually make it to the game, hopefully, not entirely sure what 1.6 brings. Maybe it won´t even conflict with anything.
There has also been extensive additions and instructions added to the wiki pages to explain how to mod and how to make your own mods for the game.
You are worried about the 80 mods you already have installed, well that may seem like a lot , but I had over 300 mods installed and yes I sometimes spent hours updating them in the past, and recently I simply deleted all of them and started fresh, adding back the ones I liked the most and leaving out the ones I didnt need right now.
Thats the great thing about this game and all the mods available, is that you can custom design the file of mods you want to change many aspects of the game, If you want a huge world to explore, then add lots of map extensions, If you want a small world, leave them out or only and one or two. So you may need to update some of your mods == now's the opportunity for you to make your game like new again and have a little different fun with it. You wont need to change them all, and most of the basic mods are already to be updated with the release of 1.6.
But what ever you do, dont complain when the creator of the game tries to improve the basic game to make it more fun for everyone, and make it easier for modders too.
The one thing I like about NEXUS is when you log in you can immediately see which mods you have that have updates available, you can sort thru the ones you downloaded in the past and immediately see when you last downloaded them and if there are updates. NEXUS keeps your favorite mod list available for you as well, you can follow them, and see what other think of them before you even down load them.
The fact the CA provides us with updates free of charge, and mods and additions to game are also free of charge is very rare in the gaming industry. We are not charged crazy prices for every small addition like some games I used to enjoy.

100% this. A safe bet would be to either set the game to update on launch and play it offline until the mods have being updated, or to just wait that without having over the hassle of playing offline and play something else meanwhile.
I´m pretty confident that most mods will be updated or won´t requiere to. Plus, some mods may be added into main game. For Skyrim for instance the issue was that the game was not being updated frequently and that there were two versions, but Stardew Valley mod scene, at least in Nexus, seems to be pretty up to date, with new moddders taking into proyects that perhaps where abandoned.
I still think anyone should wait before crying wolf, a lot could happen.
