Fish ponds
So, is there any info out there on how the fish ponds work?

You can put fish there, every few days it will produce roe, and sometimes the fish will ask for items marked with "!" if you give it the fish pond fish capacity will increase. Each fish has a different initial capacity and produce different eggs.And the number of fish sometimes increases by itself if there is still space left. That what i know

Don't seem useful to build a fish based farm around, but they are basically wells that generate some income.

That is pretty much all I have figured out as well. you can also age the roe in preserve jars. I am trying to experiment with different types of fish to see if you can get anything else but roe. I am guessing squid will give you ink but I haven't had the chance to test it. Here is interesting fact though, certain fish can change your waters color. So far I have only figured out two. Super cucumber can turn the water purple and slime jacks can turn the water green. I am still trying to test to see if any others turn the water a different color.

Lava eel will change the fishpond to red on the next day after you finish it's quest.

Squid give squid ink, and sturgeon give black roe for making caviar (as opposed to pink roe for making aged roe).

Thanks,I figured that was the case . Let me know If anyone discovers another fish that changes the waters color.

I use it to farm eels for spicy eel dish, and some other rare fish out of season, since the pond works on any season regardless of the fish you put in it. but it's not very good for profit because fish ponds can only produce common quality fish.

While it is one of the items. you only need 5 of 6 items. I unlocked the bundle without getting caviar by using the other items.

Has anyone found any real worth with the pond aside from completing collections/bundles?
I was really excited thinking maybe animals were getting a general buff for a more ranching route *(did they ever fix the ranching bug with focusing on animals making things roll over and being worse off?)*, that I came back to SDV after a long time away.

Profit wise, 25 tiles for like 30~700 a day *(if you're lucky to get a drop) made me sad. I only spent about 20 days experimenting, but even the Coop far exceeds it T_T;

I think it's more for ingredient gathering. Squid for calamari(?) or ink sacs, sturgeon for Willy's loved gifts and caviar, sea cucumber for lucky lunch...

According to the wiki page, void salmon also changes the water color

I read that also. I got a pond with void salmon and completed its first quest but the water is still blue so i am not sure if the wiki is right.

Based on wiki info, the quests are only given if the pool's fish population is at its maximum. So don't fish there until it's maxed to 10. But then the income source is not just roe but the fish themselves too. I still don't know if it's possible to get any star ranked fish out of it, propably not. Choose a high selling fish? Generally that's probably those with the highest healing/eating value. Trying on midnight carp myself, as it was twice better than even tuna.
