I haven't tried this yet because I don't have the necessary Items and because I'm in the wrong season. But I think if it's anything close to real life you have to breed Salmon in a Fish Pond

Actually real life caviar is made from sturgeon, not salmon
Luckily I kept a 30 fishes each in chests. Makes you wonder, how are they still alive LOL after so many years outside water. I shall try Sturgeon later. Because you're right. I came across the Travelling Cart at the forest on Friday, I saw the list, Caviar, and it's description. Made from Sturgeon. Should I just toss them into the breeding pool to be built by Robin?

I have a sturgeon stored in the fridge for years lol. Im not sure if i need at least 2 of the same species to start producing caviar... The wiki doesn't have enough info on this.
Wiki needs time to catch up with 1.4 data. Contribute your findings if you can. The wiki is community knowledge. We all can chip in a bit. DF's YouTube channel needs time too. Or I think he may had moved on to other games.

It would seem strange to have 1 specific mid-range fish, however close to real life, create caviar while everything else "Roe." RIght now I have void salmon, catfish, and super cucumber in the pools (just because I had them in stock). All are producing Roe for now, but I'm guessing the fish-requests to increase max pool size might lead to eventually getting the caviar product, much how happier cows and goats get you larger bottles of milk.

Sturgeon is the one you want. Salmon etc produce pink roe, sturgeon gives you black roe. Mature it in a preserves jar (like you use for jam and pickles) for caviar. Pink roe in a preserves jar gives you "aged roe".

My fish I kept stored in a chest for years were just fine in the fish pond. ^.^

It need to be roe from sturgeon, other fish does not work...
